I was scrounging through my grains and hops and I think I can make a Belgian Pale. Then I checked my yeast and it is almost 18 months expired. I have some S-05 that I could use, but I wanted a more complex yeast. So I am thinking I pitch the S-05 and the WY3522 and hope that the 3522 gives some character.
Is this a bad idea or probably won;t make a difference either way?
