Pitching 2 different yeast

Postby brewsci » Fri May 13, 2011 7:32 pm

I was scrounging through my grains and hops and I think I can make a Belgian Pale. Then I checked my yeast and it is almost 18 months expired. I have some S-05 that I could use, but I wanted a more complex yeast. So I am thinking I pitch the S-05 and the WY3522 and hope that the 3522 gives some character.

Is this a bad idea or probably won;t make a difference either way?

If there are any viable cells left in your Belgian yeast, it will almost certainly be outcompeted by the (presumably fresh and viable) S05. I don't expect you'll get much different results than if you went with only the S05.

make a starter, see if it is viable yeast. You'll know if it is in 2-3 days in a lot of cases.

Make a starter with the 3522 as Robert mentioned. That's the only way to know for sure.

That yeast is a foam monster.

I went with option C :

Put together a decent Am Pale Ale and make the Belgian when I have time to do the starter.

Thanks for all the advice. Finally getting a chance to get back into brewing. I'm excited. <Maybe I will even have time to get back to the meetings.
