Tell me what you think. This is based off the ingredient list for Nosferatu ale from Great Lakes.

Here is my $0.02.

Up the late hops. I'd go with 2 ounces of Cascade at flameout instead of one. I would probably drop the special roast a bit but not sure what your SRM is with a pound. Too much special roast can be overwhelming. I'm not really an S-04 fan so I'd probably use 05 but thats all personal preference.

Looks tasty regardless. I always try and pick up some Great Lakes beer when I'm in Chicago. Haven't tried the Nosferatu though.

Special roast looks a bit high. I would throw some Simcoe in at the end as well to keep the hop character from being one dimensional.

As to yeast, pick a highly attenuating strain (I'm not too familiar with the safale offerings--I would probably go with WLP007, the dry whitbread strain, which is fairly clean when fermented cool).

I would probably drop it to 1/2 lb. I usually use 1/4 lb in my bitters, this is twice as big as those, so 1/2 lb seems right. If the color is too light then, I would keep the Crystal 80 at 1 lb and add some Crystal 135 (even though they don't list it) to fix that, and add a touch of complexity to the malt bill.

I dropped the Special Roast to .5, added .125 Crystal 135, and added .125 more Crystal 80.

I also added 1 oz. Simcoe at flameout.
