2014 Dry Cider - 5 Gallons

5 gallons fresh apple cider 21-Sep-14
(Source: Theirbach Orchard, Marthasville, MO. Blend of apples but mostly Prima, developed by P-R-I) http://www.orangepippin.com/apples/prima

Add to fresh cider 5 campden tablets (1 tablet per 1 gallon cider). Allow to stand 24 hours and warm to room temperature.

1.5 tsp pectic enzyme
1.5 tsp acid blend
1.0 tsp Yeastex 61 yeast nutrient

Yeast: White Labs 028 Scottish Ale Yeast http://www.whitelabs.com/cider
Pitched one vial of yeast on 22-Sep-14. Ferment at basement temperature.

OG: 1.047
