I got a ton of questions about the hops in this beer during porch time tonight...and I think I answered all of them wrong, saying "Centennial" when I should have said "Columbus". Here's the correct info...the only reason I used the DME is because I didn't have enough pale ale malt on brew day to hit my target gravity. The recipe is scaled to assume you're going to lose a lot of liquid to absorption by hops and hop debris/trub. I wound up with enough beer to just about fill one corny after dry-hopping with cones.

Make a big-@$$ starter for this, oxygenate the crap out of it, and ferment on the cold side - I kept this around 63F, which is about as low as you can go with 1056. Not shown in the recipe, but probably a good idea for most St. Louis/St. Louis County water, is a couple of teaspoons of gypsum added to the mash.
