Mead FAN target

Postby siwelwerd » Thu Feb 07, 2013 4:47 pm

Making my first mead this weekend, I'm curious what FAN levels all of our experienced meadmakers target? I've seen both 130 ppm and 300-500 ppm bandied about.

And for that matter, how are they calculated?
I set out running but I take my time.

From what I've read, Fermaid K at 1g/L will contribute 130 ppm FAN, while DAP at 1g/L will contribute either 230-250 ppm depending on who you believe. Since Fermaid K contains other nutrients, it's probably best to use it at the recommended rate of 0.25 g/L and make up the rest of the FAN with DAP. At least that's my plan.

Use the recommended dosing on the Fermaid-K bottle (1/4 - 1/2 tsp. per gallon).

But, like Dale said...you are over thinking it.

Thanks for your help guys. I found some more specific info written by Clayton Cone of Lallemand that more or less answered my question.

First mead is in the fermenter! Now just to keep my hands off of it for a few months... I brewed an APA yesterday to distract me in the short term :)
